Ingredients
4 Medium Flour or Corn Tortillas
2 cups Monterey Jack or Oaxacan Cheese
1 tablespoon Extra Virgin Olive Oil or Avocado Oil
1/2 teaspoon Smoked Paprika
1/4 teaspoon Dried Mexican Oregano
Sea Salt to Taste
Instructions
- Preheat the Air Fryer to 375°F (190°C)
- Brush one side of each tortilla with oil, then flip and layer cheese, paprika, and oregano on half of each tortilla
- Fold the tortilla over to create a half-moon shape and secure edges if necessary
- Place in the air fryer basket in a single layer and cook for 3 to 4 minutes
- Flip each quesadilla and cook for another 2 to 3 minutes until crispy
- Let sit for 60 seconds before slicing into wedges

Never overcrowd the air fryer basket for best results.
Use freshly grated cheese for optimal melt.
