Ingredients
4 cups Organic Spelt or Bread Flour
1/2 cup Grass-Fed Butter (softened)
1 cup Warm Grass-Fed Milk
2 Large Organic Eggs
1/4 cup Coconut Sugar (for dough)
2 1/4 tsp Active Dry Yeast
1/2 cup Coconut Sugar (for filling)
2 tbsp Ceylon Cinnamo
4 oz Grass-Fed Cream Cheese
2 tbsp Maple Syrup
Instructions
- In a small bowl, combine the warm milk with a teaspoon of coconut sugar. Sprinkle the yeast over the top and let it sit for about 5-10 minutes until it becomes foamy
- In a large stand mixer, combine the flour, the remaining coconut sugar, and a pinch of sea salt. Slowly pour in the yeast mixture and the lightly beaten organic eggs. Mix on low speed until a shaggy dough forms
- With the mixer on medium-low, add the softened grass-fed butter one tablespoon at a time
- Knead for 8-10 minutes until the dough is smooth, elastic, and pulls away from the sides of the bowl
- Place the dough in a lightly greased bowl and cover it with a damp cloth. Let it rise for 1.5 to 2 hours until it has doubled in size
- Roll the dough into a large rectangle, spread a layer of butter, then sprinkle with coconut sugar and cinnamo
- Roll the dough tightly into a log and cut into 12 pieces. Place in a greased baking dish
- Cover the rolls and let them rise for 45-60 minutes while preheating the oven to 350°F
- Bake for 22-28 minutes until lightly golden brow
- Whisk together cream cheese, maple syrup, and vanilla then glaze the warm rolls

For dairy-free, replace butter with coconut oil and use plant-based milk.
For gluten-free, use a 1:1 gluten-free baking flour.
