Ingredients
4 cups Organic Spelt Flour or Unbleached Bread Flour
1/2 tsp Sea Salt
2 1/4 tsp Active Dry Yeast
1 cup Warm Grass-fed Whole Milk
2 Pasture-Raised Eggs (room temperature)
1 tsp Vanilla Bean Paste
1/2 cup Unsalted Grass-fed Butter (softened and cubed)
1/3 cup Coconut Sugar (for dough)
3/4 cup Coconut Sugar or Maple Sugar (for filling)
2 tbsp Ceylon Cinnamo
1/4 tsp Nutmeg
4 oz Cultured Cream Cheese
2 tbsp Maple Syrup
1 tbsp Milk
Instructions
- In a small glass bowl, combine the warm milk with one tablespoon of coconut sugar. Sprinkle the active dry yeast on top and let it sit for about 10 minutes until foamy
- In the bowl of a stand mixer, combine the remaining coconut sugar, sea salt, and flour. Pour in the yeast mixture, eggs, and vanilla paste
- Mix on low until a shaggy dough forms, then knead on medium speed for 5 minutes
- Add the softened butter one cube at a time. Ensure each piece is absorbed before adding the next
- Place the dough in a greased bowl, cover, and let it rise in a warm spot for 1 to 2 hours
- Mix the filling ingredients in a small bowl
- Roll the dough into a rectangle, spread the filling, and roll tightly into a log
- Cut into 12 rolls and place in a parchment-lined baking dish. Let them rise for 30 to 45 minutes
- Preheat the oven to 350°F and bake for 22 to 25 minutes until golde
- Mix the glaze ingredients and drizzle over warm rolls before serving
