Description

This Caesar Pasta Salad brings a gourmet flair to your table with its creamy, umami-rich dressing, hearty pasta, and crunchy romaine lettuce, making it a perfect dish for any occasion.


Ingredients

16 oz Fusilli or Farfalle Pasta
2 heads Romaine Lettuce
1 cup Parmigiano-Reggiano
1/2 cup Extra Virgin Olive Oil
1 tsp Anchovy Paste
3 tbsp Fresh Lemon Juice
3 cloves Fresh Garlic Cloves
1.5 cups Homemade Croutons
Coarse Sea Salt & Black Pepper to taste


Instructions

  1. Boil the Pasta: Bring a large pot of heavily salted water to a rolling boil. Cook the pasta until al dente. Drain and rinse with cold water
  2. Craft the Dressing: Whisk together minced garlic, anchovy paste, and lemon juice. Slowly drizzle in olive oil while whisking to create an emulsion. Season with cracked black pepper
  3. Prepare the Components: Wash and dry the Romaine Lettuce, then chop into ribbons. Shave Parmigiano-Reggiano into thin shards
  4. Combine and Coat: In a large bowl, combine the chilled pasta with half of the dressing and toss well
  5. Final Assembly: Add the chopped Romaine, half of the cheese, and croutons. Drizzle with the remaining dressing and toss gently
  6. Garnish and Serve: Garnish with remaining cheese and a sprinkle of black pepper. Serve immediately

Notes

For optimal flavor, make the dressing at least 30 minutes in advance to mellow the garlic.

Store leftovers in airtight containers, with components separated to maintain texture.
