3 Large Overripe Bananas
2 cups Spelt or Oat Flour
1/2 cup Pure Maple Syrup
1/3 cup Melted Coconut Oil
2 Large Pasture-Raised Eggs
1/2 cup Dark Chocolate Chips (70%+)
1 teaspoon Baking Soda
1 teaspoon Pure Vanilla Extract
1/2 teaspoon Sea Salt


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pa
  2. Mash the bananas in a large mixing bowl until smooth with minor lumps
  3. Whisk in melted coconut oil, maple syrup, eggs, and vanilla extract
  4. Sift in the flour, baking soda, and sea salt, folding until just combined
  5. Fold in the dark chocolate chips and reserve a few to sprinkle on top
  6. Pour the batter into the prepared loaf pan and bake for 50 to 60 minutes
  7. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely
