3 Large Overripe Bananas
2 cups Spelt or Oat Flour
1/2 cup Pure Maple Syrup
1/3 cup Melted Coconut Oil
2 Large Pasture-Raised Eggs
1/2 cup Dark Chocolate Chips (70%+)
1 teaspoon Baking Soda
1 teaspoon Pure Vanilla Extract
1/2 teaspoon Sea Salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pa
- Mash the bananas in a large mixing bowl until smooth with minor lumps
- Whisk in melted coconut oil, maple syrup, eggs, and vanilla extract
- Sift in the flour, baking soda, and sea salt, folding until just combined
- Fold in the dark chocolate chips and reserve a few to sprinkle on top
- Pour the batter into the prepared loaf pan and bake for 50 to 60 minutes
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely
