Description

This Cinnamon Brioche Pull-Apart Bread offers a decadent experience with a pillowy texture, infused with aromatic cinnamon and rich, nourishing fats. It’s perfect for sharing during a mindful brunch or a cozy weekend treat.

Ingredients

Scale

3.5 to 4 cups Organic Sprouted Spelt or All-Purpose Flour
1 packet (2.25 tsp) Active Dry Yeast
1 cup Warm Nut Milk or Grass-Fed Milk
1/4 cup Raw Honey or Maple Syrup
1/2 cup Grass-Fed Butter or Melted Coconut Oil
2 large Pasture-Raised Eggs
1 tsp Sea Salt
2 tbsp Ceylon Cinnamo
1/2 cup Coconut Sugar

Instructions

  1. Combine the warm milk, honey, and yeast in a large glass bowl. Let it sit for about 5 to 10 minutes until it becomes frothy
  2. Add the melted butter, eggs, and salt to the yeast mixture and whisk until combined. Gradually stir in the flour until a soft dough forms
  3. Knead the dough on a floured surface for about 8 to 10 minutes until smooth and elastic
  4. Place the dough in a lightly oiled bowl, cover with a warm cloth, and let it rise in a draft-free spot for 1 to 1.5 hours
  5. Mix the coconut sugar and cinnamon in a bowl. Melt additional butter to use for the filling
  6. Punch down the risen dough and roll it out into a rectangle. Brush with melted butter and sprinkle the cinnamon sugar mixture
  7. Cut the rectangle into strips, stack them, and slice the stack into squares. Stand these squares vertically in a greased loaf pa
  8. Cover the loaf pan and let it rise again for 30 to 45 minutes while preheating the oven to 350°F
  9. Bake for 30 to 35 minutes until golden brown and cooked through
  10. Cool in the pan for 10 minutes before transferring to a wire rack

Notes

Ensure eggs and butter are at room temperature before starting.

Avoid over-flouring your work surface to prevent a dry bread.

Using a kitchen scale for measuring flour by weight can yield better results.
