Description

A creamy, tangy Dill Pickle Macaroni Salad that’s perfect for cookouts, potlucks, or a quick weekday side. Easy to prep and packed with bold flavor.


Ingredients

2 cups elbow macaroni (uncooked)

1 cup chopped dill pickles

½ cup diced red onion

½ cup shredded cheddar cheese

⅓ cup chopped celery (optional)

½ cup mayonnaise

2 tbsp pickle juice

1 tbsp Dijon mustard

½ tsp garlic powder

Salt and pepper to taste

1 tbsp fresh dill or 1 tsp dried


Instructions

1. Boil macaroni in salted water until al dente. Drain and rinse with cold water.

2. In a large bowl, mix mayo, pickle juice, Dijon, garlic powder, salt, and pepper.

3. Chop pickles, red onion, celery, cheese, and dill while pasta cools.

4. Add pasta to dressing, then fold in chopped ingredients.

5. Cover and chill for at least 1 hour before serving.

Notes

Add bacon or green onions for more flavor.

Sub Greek yogurt for mayo to lighten it.

Use spicy pickles for extra kick.
