Description

This Greek Pasta Salad brings the bright flavors of the Mediterranean straight to your kitchen table, featuring tender pasta, crisp cucumbers, juicy cherry tomatoes, and salty feta cheese, all tossed in a zesty lemon-herb dressing.


Ingredients

1 lb Pasta (Rotini, Fusilli, or Penne)
1 large English Cucumber (diced)
2 cups Cherry Tomatoes (halved)
1/2 cup Red Onion (finely diced)
1/2 cup Kalamata Olives (pitted and sliced)
1 cup Feta Cheese (crumbled or cubed)
1/2 cup Extra Virgin Olive Oil
1/4 cup Red Wine Vinegar
1 tablespoon Fresh Lemon Juice
Dried Oregano, Salt, and Black Pepper (to taste)


Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Cook your chosen pasta according to the package directions until it reaches an 'al dente' texture
  2. Prepare the Dressing: While the pasta cooks, whisk together the extra virgin olive oil, red wine vinegar, lemon juice, dried oregano, salt, and pepper in a small bowl. Set this aside
  3. Chop the Vegetables: Dice the cucumber, halve the cherry tomatoes, and finely mince the red onio
  4. Drain and Rinse: Once the pasta is done, drain it and rinse it under cold running water
  5. Combine Everything: In a large mixing bowl, combine the cooled pasta, chopped vegetables, olives, and feta cheese. Pour the dressing over the salad and toss gently
  6. Chill and Serve: Let the salad sit in the refrigerator for at least 30 minutes before serving

Notes

For optimal flavor, allow the salad to marinate for a few hours or overnight.
