Description
This Grilled Chicken Sandwich with Sauce delivers incredible flavor with very little effort, featuring grilled chicken with a restaurant-quality sauce and fresh vegetables, all served on a toasted bun.
Ingredients
4 pieces Boneless, Skinless Chicken Breasts
3 tablespoons Extra Virgin Olive Oil
1 teaspoon Smoked Paprika
1 teaspoon Garlic Powder
1 teaspoon Salt
1 teaspoon Pepper
1/2 cup Greek Yogurt (or Light Mayo)
1 tablespoon Dijon Mustard
1 tablespoon Honey
4 Whole Wheat or Brioche Buns
Fresh Arugula, Sliced Tomato, Red Onion (As desired)
Instructions
- Place the chicken breasts between two sheets of plastic wrap and pound until even thickness
- Whisk together olive oil, smoked paprika, garlic powder, salt, and pepper in a bowl and marinate the chicken for at least 15 minutes
- Combine Greek yogurt, Dijon mustard, honey, and a pinch of black pepper to make the sauce, then refrigerate
- Preheat the grill to medium-high and grill the chicken for 5-7 minutes per side until the internal temperature reaches 165°F
- Toast the buns cut-side down on the grill for the last two minutes
- Spread sauce on the toasted buns, add grilled chicken, and layer with tomato, red onion, and arugula
Notes
Adjust the cooking time if using chicken thighs instead of breasts.
Can be made in a skillet if a grill is not available.
