Description
These crispy ground beef cheesy quesadillas are a family favorite! Perfectly seasoned beef, melty cheese, and warm tortillas make for the ultimate easy dinner.
Ingredients
1 lb ground beef
1 medium onion, diced
1/2 cup bell pepper, diced (optional)
1 tbsp taco seasoning
2 tbsp tomato paste or sauce
3–4 cups shredded cheese
4 large flour tortillas
2 tbsp butter or oil
Instructions
1. Cook ground beef in a skillet over medium-high heat until browned.
2. Add onions and bell peppers, cook until soft.
3. Stir in taco seasoning, tomato paste, and a splash of water; simmer.
4. Heat butter in a clean skillet over medium.
5. Place one tortilla, sprinkle cheese, add beef mixture, more cheese, then top with another tortilla.
6. Cook 2–3 minutes per side until golden.
7. Remove and rest before slicing.
8. Repeat with remaining ingredients.
Notes
Use a mix of Monterey Jack and Cheddar for best flavor.
Don’t overstuff quesadillas or they may fall apart.
Let rest before slicing so cheese sets.
