Description
This hearty Lentil Potato Soup is rich, comforting, and budget-friendly. Packed with protein, fiber, and flavor, it’s a one-pot wonder perfect for cozy dinners or meal prep.
Ingredients
2 tbsp olive oil
1 large yellow onion, diced
2 carrots, diced
2 celery stalks, diced
3 cloves garlic, minced
1 ½ cups brown or green lentils, rinsed
2 large russet potatoes, peeled & cubed
8 cups vegetable broth (or chicken broth)
1 (14.5 oz) can diced tomatoes
1 tsp dried thyme
1 tsp smoked paprika
Salt & black pepper, to taste
Fresh parsley, for garnish
Instructions
1. Heat olive oil in a large pot over medium heat. Sauté onion, carrots, and celery for 5-7 minutes until softened.
2. Add garlic and cook 1 minute until fragrant.
3. Stir in lentils, potatoes, broth, tomatoes (with juice), thyme, and smoked paprika.
4. Bring to a boil, then reduce to low. Simmer uncovered 35–40 minutes until lentils and potatoes are tender.
5. Season generously with salt and pepper.
6. Garnish with parsley and serve hot with crusty bread.
Notes
This soup tastes even better the next day. Add a splash of broth or water when reheating. Freezer-friendly for up to 3 months.
