Ingredients
2 lbs Chicken Breasts
1 cup Sweet Chili Sauce
1/4 cup Low-Sodium Soy Sauce
2 tablespoons Rice Vinegar
3 cloves Fresh Garlic
1 tablespoon Fresh Ginger
2 large Red Bell Peppers
1 tablespoon Cornstarch
1/4 cup Green Onions
Instructions
- Prepare the Sauce: In a medium mixing bowl, whisk together the sweet chili sauce, soy sauce, rice vinegar, minced garlic, and grated ginger
- Layer the Ingredients: Place your trimmed chicken breasts into the bottom of the slow cooker and pour the prepared sauce over the meat
- Add the Vegetables: Lay the sliced red bell peppers on top of the chicke
- Set the Timer: Cover the slow cooker and cook on the 'Low' setting for 3 to 4 hours
- Thicken the Sauce: Once cooked, remove the chicken, shred it, mix cornstarch with water, stir into the sauce and cook for 10 minutes
- Serve and Garnish: Return the shredded chicken to the pot, toss in the thickened glaze, and serve warm topped with green onions

For a gluten-free version, replace soy sauce with coconut aminos.
