These Banana Bread Cinnamon Rolls combine the natural sweetness of overripe bananas with a spicy cinnamon kick for a comforting breakfast treat, made efficiency without the need for yeast and lengthy rise times.
Ingredients
2 large Overripe Bananas (mashed)
2.5 cups Self-Rising Flour
1/2 cup Greek Yogurt (plain, non-fat or full-fat)
1 teaspoon Vanilla Extract
3 tablespoons Unsalted Butter (softened)
1/2 cup Brown Sugar (packed)
2 tablespoons Ground Cinnamo
1 cup Powdered Sugar
2 tablespoons Milk (any variety)
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a baking pa
- Mash the Overripe Bananas in a bowl until smooth
- Stir the Greek yogurt and vanilla into the bananas, then gradually add self-rising flour and mix until a soft dough forms
- Knead the dough gently on a floured surface, then roll it out to a rectangle
- Spread softened butter on the dough, mix brown sugar and cinnamon and sprinkle over the butter
- Roll the dough into a log and cut into 9 to 12 pieces
- Bake for 20 to 25 minutes until golden brow
- Whisk powdered sugar and milk to prepare the glaze and drizzle over warm rolls
Notes
Use room temperature yogurt for optimal rising.
Dough should feel soft, add flour if too sticky.
