Ingredients
1 lb Beef Sirloin or Ribeye (cut into 1-inch bite-sized cubes)
12 oz Pasta (Fettuccine or Pappardelle)
6 tbsp Unsalted Butter
6–8 cloves Fresh Garlic (minced finely)
2 tbsp Olive Oil
1/4 cup Fresh Parsley (chopped finely)
1/2 cup Parmesan Cheese (freshly grated)
Salt and Black Pepper (to taste)
1/2 tsp Red Pepper Flakes (optional)
Instructions
- Boil salted water in a large pot and cook pasta until 1 minute shy of al dente
- Pat beef cubes dry and season with salt and pepper
- Heat olive oil in a skillet and sear beef until browned on both sides, then set aside
- Add butter to the skillet, melt, and add garlic and red pepper flakes, cooking until fragrant
- Reserve pasta water, then combine cooked pasta in the skillet with the garlic butter, stirring in Parmesa
- Fold in beef and parsley, and adjust consistency with reserved pasta water as needed. Serve hot
Notes
Ensure beef is dry before searing for the best crust.
Reserve pasta water to create a creamy emulsion with the sauce.
