2 lbs Boneless Skinless Chicken Thighs (cubed)
1 Fresh Pineapple (sliced into rings or wedges)
1/2 cup Quality Bourbo
1/2 cup Soy Sauce
1/2 cup Brown Sugar
4 cloves Minced Garlic
1 tbsp Fresh Grated Ginger
2 tbsp Avocado Oil
1 tsp Sesame Oil
Green Onions (sliced)
Sesame Seeds
Red Pepper Flakes
Instructions
- In a medium bowl, whisk together the bourbon, soy sauce, brown sugar, minced garlic, grated ginger, and sesame oil. Reserve about one-third of this mixture to use as a finishing glaze later. Place the cubed chicken thighs in the remaining marinade for at least 30 minutes
- Preheat your griddle to medium-high heat. Ensure the surface is screaming hot
- Lightly oil the griddle surface with avocado oil and place the pineapple slices onto the hot steel. Cook for 3 to 4 minutes per side until caramelized, then move them to the cooler side of the griddle
- Spread the marinated chicken across the hottest part of the griddle in a single layer. Let it sit undisturbed for 3 minutes
- Flip the chicken and continue to cook for another 5 to 7 minutes. Pour over the reserved glaze when the chicken nears an internal temperature of 165°F
- Toss the grilled pineapple back in with the chicken for the last 60 seconds. Remove from heat and garnish lsee on the top
