Ingredients
2 cups Almond Flour (super-fine)
1/2 cup Coconut Flour
1 tsp Baking Soda
1/2 tsp Sea Salt
3 Large Organic Eggs
1/2 cup Pure Maple Syrup
1/4 cup Melted Coconut Oil
1 tsp Pure Vanilla Extract
1.5 cups Fresh Blueberries
Zest of 2 Organic Lemons
2 tbsp Fresh Lemon Juice
Optional: Sliced Almonds or Coconut Butter
Instructions
- Preheat your oven to 350°F (175°C) and line a 9×5-inch loaf pan with parchment paper
- In a large bowl, whisk together the almond flour, coconut flour, baking soda, and sea salt
- In a separate bowl, beat the eggs and mix in the maple syrup, melted coconut oil, lemon juice, lemon zest, and vanilla extract
- Pour the wet mixture into the dry ingredients and fold until just combined
- Gently fold in the fresh blueberries
- Pour the batter into the prepared loaf pan and smooth the top. Bake for 45 to 55 minutes, or until a toothpick comes out clea
- Let the loaf cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing
