A crisp, refreshing Caesar Salad with Homemade Croutons that combines the salty tang of parmesan with the earthy crunch of oven-toasted bread, perfect for family dinners or quick lunches.
Ingredients
3 heads Romaine Lettuce Hearts
1/2 cup Parmesan Cheese (Shaved)
4 cups Day-old Sourdough Bread (cubed)
1/4 cup Extra Virgin Olive Oil
1 tsp Garlic Powder
1 tsp Salt
1/2 cup Mayonnaise (or Egg Yolks)
2 tablespoons Fresh Lemon Juice
1 teaspoon Anchovy Paste (Optional)
1 teaspoon Worcestershire Sauce
2 cloves Minced Garlic
Instructions
- Preheat the oven to 375 degrees Fahrenheit. Cut the bread into one-inch cubes
- In a large bowl, toss the bread cubes with olive oil, garlic powder, and salt until evenly coated
- Spread the coated bread cubes on a baking sheet and bake for 10 to 15 minutes, tossing halfway through
- Wash and dry the romaine lettuce thoroughly, then chop it into bite-sized pieces and place in a large serving bowl
- In a small bowl, whisk together the mayonnaise, lemon juice, anchovy paste, Worcestershire sauce, and minced garlic. Optionally stir in grated parmesan cheese
- Drizzle the dressing over the romaine lettuce and toss gently until coated. Add the cooled croutons and shaved parmesan, then serve immediately
Notes
For a gluten-free option, substitute the sourdough with a gluten-free bread.
For a lighter dressing, mix half mayonnaise with Greek yogurt.
