Description

A crisp, refreshing Caesar Salad with Homemade Croutons that combines the salty tang of parmesan with the earthy crunch of oven-toasted bread, perfect for family dinners or quick lunches.


Ingredients

3 heads Romaine Lettuce Hearts
1/2 cup Parmesan Cheese (Shaved)
4 cups Day-old Sourdough Bread (cubed)
1/4 cup Extra Virgin Olive Oil
1 tsp Garlic Powder
1 tsp Salt
1/2 cup Mayonnaise (or Egg Yolks)
2 tablespoons Fresh Lemon Juice
1 teaspoon Anchovy Paste (Optional)
1 teaspoon Worcestershire Sauce
2 cloves Minced Garlic


Instructions

  1. Preheat the oven to 375 degrees Fahrenheit. Cut the bread into one-inch cubes
  2. In a large bowl, toss the bread cubes with olive oil, garlic powder, and salt until evenly coated
  3. Spread the coated bread cubes on a baking sheet and bake for 10 to 15 minutes, tossing halfway through
  4. Wash and dry the romaine lettuce thoroughly, then chop it into bite-sized pieces and place in a large serving bowl
  5. In a small bowl, whisk together the mayonnaise, lemon juice, anchovy paste, Worcestershire sauce, and minced garlic. Optionally stir in grated parmesan cheese
  6. Drizzle the dressing over the romaine lettuce and toss gently until coated. Add the cooled croutons and shaved parmesan, then serve immediately

Notes

For a gluten-free option, substitute the sourdough with a gluten-free bread.

For a lighter dressing, mix half mayonnaise with Greek yogurt.
