Ingredients
6–7 lbs Turkey Breast (Bone-in, skin-on)
1/2 cup Unsalted Butter
2 tablespoons Smoked Paprika
1 tablespoon Garlic Powder
1 tablespoon Onion Powder
1 teaspoon Cayenne Pepper
1 teaspoon Dried Thyme
1 teaspoon Dried Oregano
Kosher Salt & Black Pepper to taste
2 tablespoons Olive Oil
Instructions
- Preheat your oven to 375°F (190°C). Pat the turkey dry with paper towels
- Combine softened butter, smoked paprika, garlic powder, onion powder, cayenne, thyme, oregano, salt, and pepper to create a Cajun compound butter
- Gently loosen the skin over the turkey breast and apply half of the Cajun butter under the skin. Rub the remaining butter and a splash of olive oil over the outside of the ski
- Place the turkey in a roasting pan and roast until a meat thermometer reads 165°F (74°C)
- Remove from the oven and let rest for 15-20 minutes before carving

Using a digital meat thermometer ensures proper cooking.
