14 oz Smoked Kielbasa, sliced into 1/4-inch rounds
32 oz Frozen Diced Potatoes
4 cups Chicken Broth
1 medium Yellow Onion, finely diced
3 large Garlic Cloves, minced or pressed
1 cup Heavy Cream
2 cups Sharp Cheddar Cheese, freshly shredded
1 tsp Dried Thyme
2 tbsp Butter
Salt and Black Pepper to taste


Instructions

  1. Sear the Kielbasa in a large Dutch oven over medium-high heat for 3-4 minutes until crispy
  2. Remove the kielbasa and sauté onions in the rendered fat with butter for 3 minutes. Add garlic and thyme
  3. Pour in chicken broth, add diced potatoes, bring to a boil, then simmer for 10-12 minutes
  4. Stir in kielbasa, then add heavy cream and cheese, stirring until melted
  5. Season with salt and pepper to taste and serve hot
