This Cilantro Lime Mexican Chicken Marinade is a quick and zesty way to transform chicken into a flavorful dish perfect for various meals throughout the week.
Ingredients
1.5 lbs Chicken Breast or Thighs
1/2 cup Fresh Cilantro, chopped
1/4 cup Fresh Lime Juice
3 tablespoons Extra Virgin Olive Oil
3 cloves Minced Garlic
1 teaspoon Ground Cumi
1/2 teaspoon Chili Powder
1 teaspoon Honey or Agave
Salt and Black Pepper to taste
Instructions
- Prep the Chicken: If using chicken breasts, pound them to an even thickness
- Mix the Marinade: In a medium bowl or a large zip-top bag, combine olive oil, lime juice, chopped cilantro, minced garlic, cumin, chili powder, honey, salt, and pepper. Whisk or shake until combined
- Marinate: Add chicken to the marinade, ensuring each piece is coated. If using a bag, squeeze out excess air before sealing
- Chill: Place the chicken in the refrigerator for 30 minutes to 4 hours
- Cook: Preheat the grill or a skillet over medium-high heat. Cook chicken for 6-7 minutes per side or until internal temperature reaches 165°F
- Rest: Let the chicken rest for 5 minutes before slicing
