This Creamy Bacon & Pea Pasta Salad is a quick and flavorful dish that combines smoky bacon, sweet peas, and a tangy dressing, perfect for busy weeknights. It can be prepared in under twenty minutes and is ideal for meal prep.
Ingredients
16 ounces Short Pasta (Rotini, Fusilli, or Bowtie)
8 to 10 slices Thick-Cut Baco
2 cups Frozen Sweet Peas (thawed or blanched)
1/2 cup Finely Diced Red Onio
1 cup High-Quality Mayonnaise
1/2 cup Sour Cream
2 tablespoons Apple Cider Vinegar
1 tablespoon Granulated Sugar
Spices (Garlic Powder, Salt, Pepper to taste)
Fresh Parsley (chopped)
Instructions
- Bring a large pot of salted water to a rolling boil and cook the pasta according to the package directions for al dente
- Cook the bacon in a cold skillet over medium heat until crispy, then chop into bite-sized pieces
- In a mixing bowl, whisk together mayonnaise, sour cream, apple cider vinegar, sugar, garlic powder, salt, and pepper until smooth
- Drain the pasta and rinse with cold water to stop the cooking process
- In a large bowl, combine the cooled pasta, chopped bacon, peas, and diced red onion. Pour the dressing over and toss to coat
- Chill in the refrigerator for at least 30 minutes before serving. Garnish with fresh parsley
Notes
For a lighter version, substitute half of the mayonnaise with plain Greek yogurt.
Store leftovers in an airtight container for up to four days.
