Description

This Creamy Bacon & Pea Pasta Salad is a quick and flavorful dish that combines smoky bacon, sweet peas, and a tangy dressing, perfect for busy weeknights. It can be prepared in under twenty minutes and is ideal for meal prep.


Ingredients

16 ounces Short Pasta (Rotini, Fusilli, or Bowtie)
8 to 10 slices Thick-Cut Baco
2 cups Frozen Sweet Peas (thawed or blanched)
1/2 cup Finely Diced Red Onio
1 cup High-Quality Mayonnaise
1/2 cup Sour Cream
2 tablespoons Apple Cider Vinegar
1 tablespoon Granulated Sugar
Spices (Garlic Powder, Salt, Pepper to taste)
Fresh Parsley (chopped)


Instructions

  1. Bring a large pot of salted water to a rolling boil and cook the pasta according to the package directions for al dente
  2. Cook the bacon in a cold skillet over medium heat until crispy, then chop into bite-sized pieces
  3. In a mixing bowl, whisk together mayonnaise, sour cream, apple cider vinegar, sugar, garlic powder, salt, and pepper until smooth
  4. Drain the pasta and rinse with cold water to stop the cooking process
  5. In a large bowl, combine the cooled pasta, chopped bacon, peas, and diced red onion. Pour the dressing over and toss to coat
  6. Chill in the refrigerator for at least 30 minutes before serving. Garnish with fresh parsley

Notes

For a lighter version, substitute half of the mayonnaise with plain Greek yogurt.

Store leftovers in an airtight container for up to four days.
