This Creamy Broccoli Pasta Salad with Bacon is a fresh, filling, and incredibly fast dish that combines raw broccoli, smoky bacon, and a velvety dressing for a satisfying meal.
Ingredients
16 oz Dried Rotini or Bow Tie Pasta
4 cups Fresh Broccoli Florets
8–10 slices Thick-cut Baco
1/2 cup Red Onio
1/2 cup Sunflower Seeds or Sliced Almonds
1/2 cup Dried Cranberries or Raisins
1 cup Mayonnaise
1/2 cup Plain Greek Yogurt
3 tablespoons Apple Cider Vinegar
2 tablespoons Honey
Salt and Black Pepper to taste
Instructions
- Boil the Pasta: Bring a large pot of salted water to a boil. Add pasta and cook until al dente
- Cool the Pasta: Drain and rinse under cold water until completely cooled
- Prepare the Bacon: Fry the bacon in a skillet until crisp. Drain and crumble
- Chop the Veggies: Cut broccoli into very small florets and finely dice the red onio
- Whisk the Dressing: Combine mayonnaise, Greek yogurt, apple cider vinegar, honey, salt, and pepper in a bowl
- Assemble the Salad: In a large bowl, combine cooled pasta, broccoli, crumbled bacon, red onion, sunflower seeds, and cranberries
- Toss and Coat: Pour the dressing over the salad and toss to coat evenly
- Chill: Cover and refrigerate for at least 30 minutes before serving
Notes
For a lighter version, use light mayonnaise or increase Greek yogurt.
For gluten-free, substitute with chickpea or brown rice pasta.
