Ingredients
6–8 pieces Chicken Thighs
1.5 cups Heavy Cream
5 cloves Fresh Garlic
1/2 cup Parmesan Cheese
1/2 cup Chicken Broth
1 tsp Dried Thyme
1 tsp Dried Rosemary
1/2 tsp Smoked Paprika
2 tbsp Olive Oil
2 cups Fresh Spinach
Instructions
- Preheat your oven to 375°F (190°C) and pat the chicken thighs dry with paper towels. Season with salt, pepper, and smoked paprika
- Heat olive oil in a large, oven-safe skillet over medium-high heat. Sear chicken thighs skin-side down for 5-7 minutes until golden. Flip and sear another 2 minutes, then set aside
- In the same skillet, lower heat and add minced garlic, cooking until fragrant. Deglaze with chicken broth, scraping up the fond
- Add heavy cream, thyme, rosemary, and parmesan cheese to the skillet. Stir until the cheese melts and the sauce thickens. If using, add spinach until wilted
- Nestle the chicken back into the skillet, skin side up, and transfer to the oven. Bake for 15-20 minutes until chicken reaches 165°F
- Let rest for 5 minutes before serving with sauce spooned over the top

Let chicken sit at room temperature for 20 minutes before cooking for even heat distribution.
Do not crowd the pan when searing to avoid steaming the chicken.
