Ingredients
1.5 lbs Boneless, Skinless Chicken Breast
4 cups Fresh Broccoli Florets
1 cup Plain Greek Yogurt (Non-fat)
0.5 cup Low-Sodium Chicken Broth
1.5 cups Sharp Cheddar Cheese
1 tsp Garlic Powder
1 tsp Onion Powder
2 tbsp Almond Flour
0.5 tsp Smoked Paprika
1 tbsp Olive Oil
Instructions
- Preheat your oven to 375 degrees Fahrenheit and lightly grease a 9×13 inch baking dish
- Heat olive oil in a large skillet over medium-high heat. Sauté the cubed chicken breast until golden brown and cooked through (about 6-8 minutes). Remove from heat
- Steam the broccoli florets until crisp-tender (about 3-4 minutes), then drain any excess water
- In a medium bowl, whisk together Greek yogurt, chicken broth, garlic powder, onion powder, and almond flour. Stir in 1 cup of shredded cheddar cheese until creamy
- In the baking dish, combine the cooked chicken and steamed broccoli. Pour the yogurt and cheese mixture over the top and fold gently
- Spread the mixture evenly, sprinkle the remaining cheddar cheese on top, and dust with smoked paprika. Bake for 20-25 minutes until bubbly and golde
- Let the casserole sit for 5 minutes to thicken before serving
Notes
You can use frozen broccoli, just ensure it's thawed and drained well.
