Ingredients

1.5 lbs Boneless, Skinless Chicken Breast
4 cups Fresh Broccoli Florets
1 cup Plain Greek Yogurt (Non-fat)
0.5 cup Low-Sodium Chicken Broth
1.5 cups Sharp Cheddar Cheese
1 tsp Garlic Powder
1 tsp Onion Powder
2 tbsp Almond Flour
0.5 tsp Smoked Paprika
1 tbsp Olive Oil


Instructions

  1. Preheat your oven to 375 degrees Fahrenheit and lightly grease a 9×13 inch baking dish
  2. Heat olive oil in a large skillet over medium-high heat. Sauté the cubed chicken breast until golden brown and cooked through (about 6-8 minutes). Remove from heat
  3. Steam the broccoli florets until crisp-tender (about 3-4 minutes), then drain any excess water
  4. In a medium bowl, whisk together Greek yogurt, chicken broth, garlic powder, onion powder, and almond flour. Stir in 1 cup of shredded cheddar cheese until creamy
  5. In the baking dish, combine the cooked chicken and steamed broccoli. Pour the yogurt and cheese mixture over the top and fold gently
  6. Spread the mixture evenly, sprinkle the remaining cheddar cheese on top, and dust with smoked paprika. Bake for 20-25 minutes until bubbly and golde
  7. Let the casserole sit for 5 minutes to thicken before serving

Notes

You can use frozen broccoli, just ensure it's thawed and drained well.
