Ingredients
2 cups Quick-cooking oats
1/2 cup Natural peanut butter
1/3 cup Raw honey or pure maple syrup
1/4 cup Unsweetened cocoa powder
1 teaspoon Pure vanilla extract
24 pieces Mini pretzel sticks
Green-tinted Greek yogurt or natural sprinkles for decoratio
1/8 teaspoon Pinch of sea salt
Instructions
- Combine the peanut butter, honey, and cocoa powder in a medium-sized mixing bowl. Stir until the mixture becomes smooth and well-incorporated
- Add the vanilla extract and a pinch of sea salt to the wet base. Mix to enhance chocolate flavor
- Gradually fold in the quick-cooking oats until fully coated and the dough holds together
- Scoop out approximately two tablespoons of dough and roll into a ball
- Create a small indentation in the center of the ball
- Press broken pretzel pieces into the sides of the cookie as handles
- Add green-tinted yogurt or sprinkles into the center indentatio
- Refrigerate the cookies on a lined tray for at least 30 minutes to firm up
Notes
For a vegan version, use maple syrup instead of honey and dairy-free chocolate.
To adjust consistency, add warm water if too crumbly, or chill if too sticky.
