Description

This Fiesta Corn Dip (Crockpot) brings a burst of zesty flavor to your next gathering with absolutely zero effort. Creamy melted cheese, sweet golden corn, and a subtle kick of spice all bubbling together in one pot makes it the ultimate crowd-pleaser.


Ingredients

3 cans (15 oz) Whole Kernel Cor
16 oz Cream Cheese
2 cups Pepper Jack Cheese
1 can (4 oz) Diced Green Chiles
1 cup Sour Cream
2 medium Jalapeños
1 teaspoon Chili Powder
1/4 cup Fresh Cilantro


Instructions

  1. Lightly grease the inside of your crockpot with cooking spray
  2. Combine the drained corn, diced green chiles, and diced jalapeños in the pot
  3. Cut the cream cheese into small cubes and scatter them over the corn. Add the sour cream and chili powder
  4. Sprinkle the shredded Pepper Jack cheese over the top
  5. Cover and cook on Low for 2 to 3 hours, or on High for 1 to 1.5 hours
  6. Once the cheese is fully melted and bubbling, stir the dip until smooth
  7. Garnish with fresh chopped cilantro and serve immediately

Notes

Ensure the corn is drained thoroughly to avoid a watery dip.
