This Fiesta Corn Dip (Crockpot) brings a burst of zesty flavor to your next gathering with absolutely zero effort. Creamy melted cheese, sweet golden corn, and a subtle kick of spice all bubbling together in one pot makes it the ultimate crowd-pleaser.
Ingredients
3 cans (15 oz) Whole Kernel Cor
16 oz Cream Cheese
2 cups Pepper Jack Cheese
1 can (4 oz) Diced Green Chiles
1 cup Sour Cream
2 medium Jalapeños
1 teaspoon Chili Powder
1/4 cup Fresh Cilantro
Instructions
- Lightly grease the inside of your crockpot with cooking spray
- Combine the drained corn, diced green chiles, and diced jalapeños in the pot
- Cut the cream cheese into small cubes and scatter them over the corn. Add the sour cream and chili powder
- Sprinkle the shredded Pepper Jack cheese over the top
- Cover and cook on Low for 2 to 3 hours, or on High for 1 to 1.5 hours
- Once the cheese is fully melted and bubbling, stir the dip until smooth
- Garnish with fresh chopped cilantro and serve immediately
