Ingredients
2 lbs Chicken Breasts or Thighs, cut into 1-inch cubes
1/3 cup Coconut Aminos
3 tbsp Raw Honey or Maple Syrup
2 tbsp Sriracha or Chili Garlic Sauce
2 tbsp Fresh Ginger, grated
4 Garlic Cloves, minced
2 tbsp Fresh Lime Juice
1 tbsp Avocado Oil
Instructions
- Prepare the Marinade: In a medium-sized glass bowl, whisk together the coconut aminos, raw honey, sriracha, grated ginger, minced garlic, lime juice, and avocado oil until the honey is fully dissolved
- Marinate the Chicken: Place cubed chicken into a large reusable silicone bag or shallow glass dish. Pour about two-thirds of the marinade over the chicken, sealing the container and refrigerating for at least 30 minutes
- Prepare the Skewers: Soak wooden skewers in water for 30 seconds if using, or ensure metal skewers are clean and oiled
- Thread the Chicken: Thread the marinated chicken pieces onto the skewers, leaving slight space between each piece
- Preheat the Grill: Set grill to medium-high heat (approximately 400°F) and lightly coat with avocado oil
- Grill to Perfection: Cook the skewers for 12 to 15 minutes, turning every 3 to 4 minutes. Baste with reserved marinade during the last 5 minutes of cooking
- Rest and Serve: Once chicken reaches an internal temperature of 165°F, remove from grill and let rest for 5 minutes before serving
