Description

Ingredients

500 g Unbleached All-Purpose or Bread Flour
400 ml Warm Water (filtered)
2.25 tsp Active Dry Yeast
1 tsp Raw Honey or Maple Syrup
2 tsp Fine Sea Salt
1/2 cup Extra Virgin Olive Oil (divided)
Fresh Rosemary & Flaky Sea Salt (for topping)


Instructions

  1. In a large glass bowl, combine the warm filtered water, honey, and yeast. Stir gently and let it sit for 5 to 10 minutes until frothy
  2. Add flour and sea salt to the yeast mixture. Stir until a shaggy, sticky dough forms
  3. Drizzle two tablespoons of olive oil over the dough, cover with a damp cloth, and let it rest for 1.5 to 2 hours until doubled
  4. Gently pull the edges of the dough toward the center to build strength
  5. Pour two tablespoons of olive oil into a 9×13 inch baking pan. Transfer the dough to the pan, coating it with oil. Rest for another 30 to 45 minutes
  6. Grease fingers with olive oil and press deep into the dough to create dimples. Drizzle remaining oil on top
  7. Sprinkle fresh rosemary and flaky sea salt over the surface. Let sit while preheating oven to 425°F (220°C)
  8. Bake for 20 to 25 minutes until golden brown. Transfer to a wire rack to cool

Notes

For a gluten-free option, use a high-quality 1-to-1 gluten-free baking flour.

Allow the dough to cold ferment in the refrigerator for 12 to 24 hours for better flavor.
