Ingredients
500 g Unbleached All-Purpose or Bread Flour
400 ml Warm Water (filtered)
2.25 tsp Active Dry Yeast
1 tsp Raw Honey or Maple Syrup
2 tsp Fine Sea Salt
1/2 cup Extra Virgin Olive Oil (divided)
Fresh Rosemary & Flaky Sea Salt (for topping)
Instructions
- In a large glass bowl, combine the warm filtered water, honey, and yeast. Stir gently and let it sit for 5 to 10 minutes until frothy
- Add flour and sea salt to the yeast mixture. Stir until a shaggy, sticky dough forms
- Drizzle two tablespoons of olive oil over the dough, cover with a damp cloth, and let it rest for 1.5 to 2 hours until doubled
- Gently pull the edges of the dough toward the center to build strength
- Pour two tablespoons of olive oil into a 9×13 inch baking pan. Transfer the dough to the pan, coating it with oil. Rest for another 30 to 45 minutes
- Grease fingers with olive oil and press deep into the dough to create dimples. Drizzle remaining oil on top
- Sprinkle fresh rosemary and flaky sea salt over the surface. Let sit while preheating oven to 425°F (220°C)
- Bake for 20 to 25 minutes until golden brown. Transfer to a wire rack to cool

For a gluten-free option, use a high-quality 1-to-1 gluten-free baking flour.
Allow the dough to cold ferment in the refrigerator for 12 to 24 hours for better flavor.
