Ingredients
1.5 to 2 pounds Boneless, Skinless Chicken Thighs
2 Fresh Lemons (zest and juice)
4 to 6 large cloves Fresh Garlic (finely minced or crushed)
2 tablespoons Extra Virgin Olive Oil
1 teaspoon Dried Oregano
Kosher Salt (to taste)
Coarse Black Pepper (to taste)
Fresh Parsley (for garnish)
1 tablespoon Unsalted Butter
Instructions
- Pat the chicken thighs dry with paper towels
- In a medium bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, dried oregano, salt, and pepper
- Marinate the chicken in a large glass dish or zip-top bag for at least 20 minutes or up to 4 hours
- Heat a large cast-iron or stainless steel skillet over medium-high heat and add a tablespoon of olive oil until it shimmers
- Add the chicken thighs to the pan and cook for 5 to 7 minutes until golden-brown on one side
- Flip the thighs and cook for another 5 to 6 minutes, or until the internal temperature reaches 165°F (74°C)

- Transfer the chicken to a warm plate and let it rest for 5 minutes before serving
