Ingredients
16 ounces Spooky-shaped pasta
3 cups Sharp yellow cheddar cheese
2 cups Whole milk or 2% milk
4 tablespoons Unsalted butter
3 tablespoons All-purpose flour
1/2 teaspoon Ground mustard
1/2 teaspoon Smoked paprika
Sea salt and black pepper to taste
Instructions
- Fill a large stockpot with water and a generous pinch of sea salt, then bring it to a rolling boil over high heat
- Add your spooky pasta shapes to the water and cook them according to the package directions until they are al dente
- Drain the pasta carefully, but do not rinse it
- In a separate medium saucepan, melt the unsalted butter over medium heat until it begins to bubble and foam
- Whisk in the all-purpose flour and cook the mixture for about one minute to create a light roux
- Slowly pour in the milk while whisking constantly to prevent lumps
- Simmer the sauce gently for three to five minutes until it thickens enough to coat the back of a wooden spoo
- Remove the pan from the heat and stir in the freshly shredded cheddar cheese, ground mustard, and paprika
- Stir until the cheese melts completely and the sauce looks smooth
- Pour the warm cheese sauce over the cooked pasta shapes and toss gently
- Serve immediately in festive bowls
