16 ounces Spooky-shaped pasta
3 cups Sharp yellow cheddar cheese
2 cups Whole milk or 2% milk

1/2 teaspoon Smoked paprika
Sea salt and black pepper to taste


Instructions

  1. Fill a large stockpot with water and a generous pinch of sea salt, then bring it to a rolling boil over high heat
  2. Add your spooky pasta shapes to the water and cook them according to the package directions until they are al dente
  3. Drain the pasta carefully, but do not rinse it
  4. In a separate medium saucepan, melt the unsalted butter over medium heat until it begins to bubble and foam
  5. Whisk in the all-purpose flour and cook the mixture for about one minute to create a light roux
  6. Slowly pour in the milk while whisking constantly to prevent lumps
  7. Simmer the sauce gently for three to five minutes until it thickens enough to coat the back of a wooden spoo
  8. Remove the pan from the heat and stir in the freshly shredded cheddar cheese, ground mustard, and paprika
  9. Stir until the cheese melts completely and the sauce looks smooth
  10. Pour the warm cheese sauce over the cooked pasta shapes and toss gently
  11. Serve immediately in festive bowls
