Ingredients
2 cups Superfine Almond Flour
1/2 cup Coconut Sugar
1/4 cup Organic Coconut Oil (Melted)
1/2 cup Dark Chocolate Chips (70% Cacao)
1 unit Large Pasture-Raised Egg
1 teaspoon Pure Vanilla Extract
1/2 teaspoon Baking Soda
1/4 teaspoon Sea Salt
Instructions
- Preheat your oven to 350 degrees Fahrenheit and line a large baking sheet with parchment paper
- In a medium glass bowl, whisk together the almond flour, coconut sugar, baking soda, and sea salt until smooth
- In a separate bowl, beat the egg and stir in the melted coconut oil and vanilla extract until combined
- Slowly pour the wet ingredients into the dry mixture, using a wooden spoon or spatula to fold them together until a thick dough forms
- Gently fold in the dark chocolate chips until evenly distributed
- Use a cookie scoop to place even rounds of dough onto the baking sheet and flatten them slightly with your palm
- Bake for 10 to 12 minutes until the edges are golden brow
- Allow the cookies to cool on the baking sheet for at least 10 minutes
Notes
Ensure your egg is at room temperature to prevent the melted coconut oil from solidifying.
Do not overmix the batter as this can lead to a tougher texture.
Reserve a few chocolate chips to press into the tops of the cookies after removing them from the oven.
