Instructions

  1. In a wide-mouth mason jar, add rolled oats, chia seeds, and pumpkin pie spice. Stir to mix
  2. Pour in almond milk, pumpkin puree, maple syrup, and vanilla extract. Stir vigorously
  3. Seal the jar tightly and shake to mix well, ensuring no dry pockets of oats
  4. Refrigerate the mixture for at least 4 hours, preferably overnight
  5. In the morning, stir the oats and top with spooky toppings before serving

Notes

For a sweeter option, mash half a ripe banana instead of using maple syrup.

You can substitute almond milk with coconut milk or other non-dairy milk.
