Halloween Whoopie Pies are handheld delights featuring a soft cake-like crumb paired with a rich, velvety filling. These festive treats combine dark chocolate shells with a vibrant orange cream, making them a perfect centerpiece for your autumn celebrations.
Ingredients
2 1/4 cups All-purpose flour (sifted)
2/3 cup Dutch-processed cocoa powder
1 1/2 teaspoons Baking soda
1/2 teaspoon Sea salt
1/2 cup Unsalted butter (softened)
1 cup Brown sugar (packed)
1 Large egg (room temperature)
1 teaspoon Pure vanilla extract
1 cup Buttermilk
3 cups Confectioners’ sugar
1/2 cup Vegetable shortening or butter
1 1/2 cups Marshmallow fluff
As needed Orange food coloring (natural)
Instructions
- Preheat your oven to 350°F (175°C). Line two large baking sheets with parchment paper
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, and sea salt
- In a large bowl, cream the softened butter and brown sugar together until light and fluffy
- Beat in the egg and vanilla extract, then gradually add the buttermilk, alternating with the dry ingredients
- Drop rounded tablespoons of batter onto the prepared baking sheets, spacing them at least 2 inches apart. Bake for 10 to 12 minutes
- Cool the cake rounds on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely
- Beat the shortening (or butter), confectioners' sugar, and marshmallow fluff until smooth. Add orange food coloring as needed
- Spread filling on the flat side of one cake round, then top with another round
