Ingredients
4 Large Whole Grain or Sprouted Tortillas
8–10 Ounces Nitrate-Free Lean Ham (Sliced thin)
8 Ounces Organic Cream Cheese or Neufchâtel
1 Cup Grass-Fed Sharp Cheddar Cheese (Shredded)
2 Cups Fresh Baby Spinach
1/4 Cup Green Onions (Finely chopped)
1/2 Cup Bell Peppers (Finely diced)
1 Tablespoon Dijon Mustard or Stone-Ground Mustard
Instructions
- In a medium mixing bowl, combine the softened organic cream cheese, Dijon mustard, and finely chopped green onions until smooth
- Wash and thoroughly dry the baby spinach and bell peppers. Finely dice the bell peppers
- Spread about two tablespoons of the cream cheese mixture on a whole grain tortilla, leaving a small half-inch border
- Lay 2-3 slices of nitrate-free ham over the cream cheese and sprinkle shredded cheddar cheese on top
- Add a thin layer of baby spinach and sprinkle with diced bell peppers
- Roll the tortilla tightly starting from the bottom edge, using firm pressure
- Wrap the rolled tortilla in parchment paper or beeswax wrap and chill in the refrigerator for at least 30-60 minutes
- Once chilled, slice the rolls into one-inch thick circles
Notes
For gluten-free options, substitute with almond flour or coconut flour tortillas.
Using a serrated knife is recommended for slicing the pinwheels.
Ensure vegetables are bone-dry to prevent sogginess.
