Ingredients
1.5 lbs Grass-Fed Ground Beef
4 large Russet or Yukon Gold Potatoes, sliced
3 large Organic Carrots, sliced
1 large Yellow Onion, sliced into rings
Sea Salt and Black Pepper, to taste
1 teaspoon Garlic Powder
1/2 teaspoon Dried Thyme or Rosemary
1/4 cup Beef Bone Broth (Optional)
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish
- In a mixing bowl, combine the ground beef with sea salt, black pepper, garlic powder, and dried thyme
- Layer sliced potatoes at the bottom of the baking dish and sprinkle with salt and pepper
- Crumble the seasoned beef over the potatoes in an even layer
- Add sliced carrots over the beef, and top with onion rings
- Cover tightly with foil and bake for 45 to 50 minutes
- Remove the foil and bake for an additional 10 to 15 minutes
- Let it rest for five minutes before serving
Notes
For a lower-carb version, replace potatoes with cauliflower or radishes.
For a vegan option, use thick-cut Portobello mushrooms or seasoned lentils instead of beef.
