A classic Homemade Cherry Pie recipe that combines tart cherries with a buttery, flaky crust using time-saving shortcuts.

2 (9-inch) Pie Crusts
5–6 cups Tart Cherries
3/4 cup Granulated Sugar
4 tablespoons Cornstarch
1 tablespoon Lemon Juice
1 teaspoon Vanilla Extract
1 tablespoon Unsalted Butter
1 Egg + 1 tsp Water (for egg wash)
Instructions
- Preheat the oven to 400°F (200°C) and prepare the pie crust in a 9-inch pie plate
- In a large mixing bowl, combine pitted cherries, sugar, cornstarch, lemon juice, and vanilla extract. Toss gently
- Fill the prepared pie crust with the cherry mixture and dot with cubed butter
- Cover with the second crust, trim the excess, crimp the edges, and brush with the egg wash
- Bake for 45-55 minutes on a baking sheet
- Cool for at least two hours before slicing
Notes
For sweet cherries, reduce sugar by 1/4 cup.
To make a vegan version, use vegan pie crust and almond milk for egg wash.
