Description

1 lb Fresh Strawberries (hulled and sliced)
2 cups Fresh Pineapple (diced)
1 cup Fresh Blueberries
1 cup Red or Green Grapes (halved)
34 Kiwi (peeled and sliced)
23 Mandarin Oranges (peeled and segmented)
1/4 cup Raw Honey
2 tablespoons Fresh Lime Juice (about 12 limes)
1 tablespoon Fresh Mint Leaves (finely chopped)


Instructions

  1. Wash all fresh produce under cold running water. Hull and slice the strawberries, peel and dice the pineapple, and halve the grapes
  2. Combine the strawberries, pineapple, blueberries, grapes, kiwi, and mandarin segments in a clear glass bowl
  3. In a separate bowl, whisk together the raw honey and freshly squeezed lime juice until smooth
  4. Pour the honey-lime mixture over the fruit and gently fold them together until well coated
  5. Sprinkle the chopped mint over the top, cover, and chill the salad in the refrigerator for at least 30 minutes before serving
  6. Just before serving, toss gently to redistribute the dressing

Notes

For a vegan option, substitute honey with maple syrup or agave nectar.
