Ingredients
1 lb Fresh Strawberries (hulled and sliced)
2 cups Fresh Pineapple (diced)
1 cup Fresh Blueberries
1 cup Red or Green Grapes (halved)
3–4 Kiwi (peeled and sliced)
2–3 Mandarin Oranges (peeled and segmented)
1/4 cup Raw Honey
2 tablespoons Fresh Lime Juice (about 1–2 limes)
1 tablespoon Fresh Mint Leaves (finely chopped)
Instructions
- Wash all fresh produce under cold running water. Hull and slice the strawberries, peel and dice the pineapple, and halve the grapes
- Combine the strawberries, pineapple, blueberries, grapes, kiwi, and mandarin segments in a clear glass bowl
- In a separate bowl, whisk together the raw honey and freshly squeezed lime juice until smooth
- Pour the honey-lime mixture over the fruit and gently fold them together until well coated
- Sprinkle the chopped mint over the top, cover, and chill the salad in the refrigerator for at least 30 minutes before serving
- Just before serving, toss gently to redistribute the dressing
