Ingredients
2 cups Shredded Chicken Breast
3 tablespoons Hot Honey
1/2 cup Barbecue Sauce
4 units Large Flour Tortillas
1.5 cups Shredded Sharp Cheddar Cheese
1 cup Shredded Monterey Jack Cheese
1/4 cup Minced Red Onio
2 tablespoons Chopped Fresh Cilantro
1 tablespoon Butter or Olive Oil
Instructions
- In a medium mixing bowl, combine the shredded chicken, barbecue sauce, and hot honey
- Lay tortillas flat and spread a layer of mixed cheeses on half of each tortilla
- Distribute the chicken mixture evenly over the cheese layer, and add minced onions and cilantro
- Fold the tortillas over to create a half-moon shape and press down gently
- Heat a skillet over medium heat, add oil or butter, and place quesadillas in the skillet
- Cook for 3-4 minutes per side until golden brown and cheese is melted
- Remove, let rest for one minute, then slice into wedges
