The chicken is marinated in a mixture of pineapple juice, soy sauce, brown sugar, and spices, ensuring that it is juicy and full of flavor. Ingredients
3 lbs Chicken Thighs (Bone-in, skin-on)
1 cup Unsweetened Pineapple Juice
1/2 cup Soy Sauce (or Tamari)
1/2 cup Brown Sugar (Packed)
1/2 cup Ketchup
2 tbsp Fresh Ginger (Grated)
4 cloves Fresh Garlic (Minced)
1 tbsp Rice Vinegar
1 tsp Sesame Oil
Instructions
- In a large mixing bowl, whisk together the pineapple juice, soy sauce, brown sugar, ketchup, rice vinegar, sesame oil, grated ginger, and minced garlic to prepare the marinade
- Reserve approximately 1/2 cup of the marinade in a separate container and refrigerate for basting later
- Place the chicken thighs in a resealable bag or shallow dish, pour the remaining marinade over them, seal, and refrigerate for at least 4 hours or overnight
- Preheat your grill to medium-high heat (375°F to 400°F) and lightly oil the grates
- Grill the chicken skin-side down for 5 to 7 minutes, turning and basting with reserved marinade every 5 minutes until cooked to an internal temperature of 165°F
- Remove from the grill, let rest for 5-10 minutes, then serve
Notes
For an oven method, bake at 400°F and baste every 10 minutes, finishing under the broiler if desired.
