Ingredients
3 pounds Red Bliss Potatoes
1 cup Good Quality Mayonnaise
2 tablespoons Dijon Mustard
2 tablespoons Whole-Grain Mustard
1/2 cup Fresh Dill
1/2 cup Red Onio
1/2 cup Celery
Kosher Salt to Taste
Black Pepper to Taste
Instructions
- Place scrubbed and cubed red potatoes into a large pot of cold, salted water. Bring to a boil, then simmer for 10 to 15 minutes until tender
- Prepare the dressing by whisking together the mayonnaise, Dijon mustard, whole-grain mustard, salt, and pepper in a small bowl
- Drain the potatoes and let them steam-dry for about two minutes
- Place warm potatoes in a large mixing bowl and pour the mustard dressing over them. Toss gently
- Add diced red onion, celery, and fresh dill to the bowl, folding gently
- Adjust seasoning with extra salt or pepper if necessary and let sit at room temperature for 30 minutes before refrigerating

Start potatoes in cold water to prevent mushiness.
