Ingredients
14 ounces Smoked Kielbasa (sliced into rounds)
1.5 pounds Yukon Gold Potatoes (cubed)
1 unit Large Yellow Onion (diced)
1 unit Red Bell Pepper (chopped)
1 unit Green Bell Pepper (chopped)
3 cloves Fresh Garlic (minced)
2 tablespoons Extra Virgin Olive Oil
1 teaspoon Smoked Paprika
1/2 teaspoon Dried Oregano
Sea Salt and Black Pepper to taste
2 tablespoons Fresh Parsley (for garnish)
Instructions
- Heat one tablespoon of olive oil in a large heavy-duty skillet over medium-high heat. Add the sliced kielbasa rounds in a single layer and cook for 3-4 minutes per side until they develop a dark, caramelized crust. Remove from the pan and set aside
- Add the remaining tablespoon of olive oil to the same skillet. Toss in the cubed potatoes and season with salt, pepper, and smoked paprika. Cover with lid for about 8-10 minutes, stirring occasionally
- Remove the lid and add the diced onions and bell peppers to the potatoes. Continue cooking for another 5-7 minutes until the onions become translucent and the potatoes are fork-tender
- Stir in the minced garlic and dried oregano, cooking for 1 minute until fragrant. Be careful not to burn the garlic
- Return the browned kielbasa to the skillet and toss everything together. Cook for an additional 2 minutes to heat the sausage through
