1.52 lbs Chicken Breasts or Thighs
1/4 Cup Extra Virgin Olive Oil
2 Large Fresh Lemons (Juice)
1 Tablespoon Lemon Zest
45 Cloves Fresh Garlic, minced
2 Tablespoons Fresh Parsley, chopped
1 Teaspoon Dried Oregano
1/2 Teaspoon Dried Thyme
1 Teaspoon Kosher Salt
1/2 Teaspoon Black Pepper


Instructions

  1. Zest the lemons and mince the garlic cloves
  2. In a bowl or zip-top bag, combine olive oil, lemon juice, lemon zest, garlic, parsley, oregano, thyme, salt, and pepper
  3. Pat chicken dry and pound to even thickness if needed
  4. Marinate chicken in the mixture, ensuring it's fully coated
  5. Chill for at least 30 minutes
  6. Preheat grill to medium-high heat and oil the grates
  7. Grill chicken for 5-7 minutes per side until cooked through (165°F internal temperature)
  8. Let chicken rest for 5 minutes before serving

Notes

Sweeten and reduce sodium by replacing half the salt with orange juice.

For a flavor kick, add red pepper flakes.

This marinade can also be used for shrimp, pork chops, or tofu.
