Ingredients
1.5 – 2 lbs Chicken Breasts or Thighs
1/4 Cup Extra Virgin Olive Oil
2 Large Fresh Lemons (Juice)
1 Tablespoon Lemon Zest
4–5 Cloves Fresh Garlic, minced
2 Tablespoons Fresh Parsley, chopped
1 Teaspoon Dried Oregano
1/2 Teaspoon Dried Thyme
1 Teaspoon Kosher Salt
1/2 Teaspoon Black Pepper
Instructions
- Zest the lemons and mince the garlic cloves
- In a bowl or zip-top bag, combine olive oil, lemon juice, lemon zest, garlic, parsley, oregano, thyme, salt, and pepper
- Pat chicken dry and pound to even thickness if needed
- Marinate chicken in the mixture, ensuring it's fully coated
- Chill for at least 30 minutes
- Preheat grill to medium-high heat and oil the grates
- Grill chicken for 5-7 minutes per side until cooked through (165°F internal temperature)
- Let chicken rest for 5 minutes before serving
Notes
Sweeten and reduce sodium by replacing half the salt with orange juice.
For a flavor kick, add red pepper flakes.
