Ingredients

1 lb Large Sea Scallops
2 tbsp Extra Virgin Olive Oil
1 large Lemon Juice & Zest
3 cloves Fresh Garlic, minced
2 tbsp Fresh Parsley, chopped
1 tbsp Fresh Chives, finely chopped
Sea Salt & Black Pepper, to taste


Instructions

  1. Remove the small side muscle from each scallop if attached. Rinse under cold water and pat dry
  2. In a medium glass bowl, combine olive oil, lemon zest, lemon juice, minced garlic, parsley, and chives. Whisk until emulsified
  3. Toss scallops in the marinade and season with salt and pepper. Marinate for no more than 10 minutes
  4. Preheat the grill to medium-high heat and lightly oil the grates to prevent sticking
  5. Grill scallops for 2 to 3 minutes per side until opaque in the center
  6. Remove from heat, arrange on a platter, and garnish with extra lemon wedges
