Ingredients
1 lb Large Sea Scallops
2 tbsp Extra Virgin Olive Oil
1 large Lemon Juice & Zest
3 cloves Fresh Garlic, minced
2 tbsp Fresh Parsley, chopped
1 tbsp Fresh Chives, finely chopped
Sea Salt & Black Pepper, to taste
Instructions
- Remove the small side muscle from each scallop if attached. Rinse under cold water and pat dry
- In a medium glass bowl, combine olive oil, lemon zest, lemon juice, minced garlic, parsley, and chives. Whisk until emulsified
- Toss scallops in the marinade and season with salt and pepper. Marinate for no more than 10 minutes
- Preheat the grill to medium-high heat and lightly oil the grates to prevent sticking
- Grill scallops for 2 to 3 minutes per side until opaque in the center
- Remove from heat, arrange on a platter, and garnish with extra lemon wedges
