Ingredients
3 lbs Organic Red or Yukon Gold Potatoes
6–8 slices Pasture-Raised Baco
1/2 cup Fresh Chives, chopped
1 cup Plain Greek Yogurt, Full Fat
2 tbsp Apple Cider Vinegar
1 tbsp Dijon Mustard
To taste Sea Salt
To taste Black Pepper
1/2 cup Grass-Fed Sharp Cheddar Cheese, shredded
Instructions
- Wash the potatoes thoroughly and cut them into bite-sized cubes (about 1 inch). Place them in a large pot covered with cold filtered water and add a pinch of sea salt
- Bring the water to a boil, then reduce to a simmer. Cook potatoes for 10-12 minutes until fork-tender but firm. Drain and let cool completely
- Cook the bacon in a cold skillet over medium heat until crispy. Remove and drain on a paper towel, then crumble when cooled
- In a small bowl, whisk together Greek yogurt, apple cider vinegar, Dijon mustard, salt, and pepper until smooth
- In a large mixing bowl, combine cooled potatoes, crumbled bacon, chopped chives, and shredded cheese
- Fold the dressing into the potato mixture gently to coat without breaking the potatoes
