1/3 cup Raw Wildflower Honey
3 large Fresh Organic Lemons
2 tablespoons Extra Virgin Olive Oil
4 cloves Fresh Garlic
1 teaspoon Smoked Paprika
1 tablespoon Fresh Rosemary
1 tablespoon Fresh Thyme
Sea Salt to taste
Cracked Black Pepper to taste


Instructions

  1. Step 1: Prepare the Chicken. Preheat your oven to 400°F (200°C). Pat the chicken thighs bone-dry using paper towels and season them generously with sea salt and cracked black pepper
  2. Step 2: Create the Glaze. In a small bowl, whisk together honey, lemon juice, lemon zest, olive oil, minced garlic, smoked paprika, and chopped herbs
  3. Step 3: Sear for Success (Optional). Sear the chicken thighs in a hot oven-safe skillet over medium-high heat for 3-4 minutes per side
  4. Step 4: Coat the Thighs. Place the chicken thighs in a baking dish, pour half of the honey-lemon mixture over them, tucking a few lemon slices between the pieces
  5. Step 5: The First Bake. Roast in the oven for 20 minutes
  6. Step 6: Baste and Finish. Remove from the oven, pour the remaining glaze over, and return for another 10-15 minutes, until internal temperature reaches 165°F (74°C)
  7. Step 7: Rest and Serve. Let the meat rest for 5 minutes before serving
