These Pumpkin Patch Dirt Cups are a nourishing dessert featuring creamy pumpkin mousse and a rich chocolatey crumble, perfect for fall celebrations and healthy snacking.
Ingredients
15 oz can Organic Pumpkin Puree
1 cup Full-fat Greek Yogurt or Coconut Cream
1/3 cup Grade A Maple Syrup
1.5 tsp Pumpkin Pie Spice
1 cup Almond Flour or Oat Flour
3 tbsp Raw Cacao Powder
2 tbsp Melted Coconut Oil
6–8 pieces Dried Apricots or Small Clementine Segments
Instructions
- In a large glass mixing bowl, combine the organic pumpkin puree, Greek yogurt (or coconut cream), and maple syrup. Whisk until smooth and airy
- Add pumpkin pie spice and a pinch of sea salt, stir well, and refrigerate to firm up slightly
- In a separate bowl, mix almond flour, raw cacao powder, and melted coconut oil until crumbly. Adjust texture by adding water or more oil if needed
- Layer chocolate dirt in small jars, followed by the pumpkin mousse, and top with another layer of cacao dirt
- Garnish with dried apricots or fruit pieces and mint leaf to mimic a pumpkin vine. Chill for at least 30 minutes before serving
Notes
Ensure yogurt or coconut cream is chilled for best texture.
