Description

These Pumpkin Patch Dirt Cups are a nourishing dessert featuring creamy pumpkin mousse and a rich chocolatey crumble, perfect for fall celebrations and healthy snacking.


Ingredients

15 oz can Organic Pumpkin Puree
1 cup Full-fat Greek Yogurt or Coconut Cream
1/3 cup Grade A Maple Syrup
1.5 tsp Pumpkin Pie Spice
1 cup Almond Flour or Oat Flour
3 tbsp Raw Cacao Powder
2 tbsp Melted Coconut Oil
68 pieces Dried Apricots or Small Clementine Segments


Instructions

  1. In a large glass mixing bowl, combine the organic pumpkin puree, Greek yogurt (or coconut cream), and maple syrup. Whisk until smooth and airy
  2. Add pumpkin pie spice and a pinch of sea salt, stir well, and refrigerate to firm up slightly
  3. In a separate bowl, mix almond flour, raw cacao powder, and melted coconut oil until crumbly. Adjust texture by adding water or more oil if needed
  4. Layer chocolate dirt in small jars, followed by the pumpkin mousse, and top with another layer of cacao dirt
  5. Garnish with dried apricots or fruit pieces and mint leaf to mimic a pumpkin vine. Chill for at least 30 minutes before serving

Notes

Ensure yogurt or coconut cream is chilled for best texture.
