Ingredients
2 lbs Organic Red Potatoes
1/2 cup Fresh Dill, chopped
1/4 cup Red Onion, finely diced

1 tablespoon Dijon Mustard
Sea Salt & Black Pepper to taste
1 clove Garlic, minced
Instructions
- Scrub the red potatoes thoroughly and cut them into uniform 1-inch cubes
- Place the cubed potatoes into a large pot, cover with cold salted water, and bring to a boil. Reduce heat and simmer for 10 to 12 minutes until tender yet firm
- Drain the potatoes and let them cool for about 5 minutes
- In a small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, minced garlic, sea salt, and black pepper
- In a large bowl, combine the warm potatoes, red onion, and fresh dill. Pour the dressing over and toss gently
- For best flavor, chill in the refrigerator for at least 30 minutes before serving
