Description

A creamy and tangy Red Potato Salad featuring red potatoes, high-quality mayonnaise, Dijon mustard, and fresh herbs.


Ingredients

3 lbs Red Potatoes, cut into 1-inch chunks
1 cup High-quality Mayonnaise, preferably avocado oil-based
2 tablespoons Dijon Mustard
1 tablespoon Apple Cider Vinegar
1 cup Diced Celery
1/2 cup Minced Red Onio
1/4 cup Fresh Dill, finely chopped
1/4 cup Fresh Parsley, finely chopped
Sea Salt, to taste
Black Pepper, to taste
A pinch Smoked Paprika


Instructions

  1. Scrub the red potatoes thoroughly and cut them into 1-inch chunks
  2. Place the potatoes in a pot, cover with cold water, and add a tablespoon of salt. Bring to a boil, then simmer for 10 to 15 minutes until tender
  3. Drain the potatoes and immediately drizzle with apple cider vinegar. Let cool to room temperature
  4. In a bowl, whisk together the mayonnaise, Dijon mustard, diced celery, minced red onion, and fresh herbs until smooth
  5. Pour the dressing over the cooled potatoes and gently fold together without mashing
  6. Cover and refrigerate for at least two hours before serving

Notes

For a lighter option, substitute mayonnaise with Greek yogurt.

Best served chilled or at room temperature. Do not freeze.
