Ingredients
14–16 oz Turkey Kielbasa
3 large Bell Peppers
1 medium Red Onio
2 tbsp Extra Virgin Olive Oil
1 tsp Smoked Paprika
1 tsp Garlic Powder
1/2 tsp Dried Oregano
Sea Salt & Black Pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and line a large, rimmed baking sheet with parchment paper or aluminum foil
- Slice the turkey kielbasa into 1/2-inch thick coins. De-seed and cut the bell peppers into 1-inch strips. Cut the red onion into wedges
- Place the sliced sausage, peppers, and onions onto the prepared sheet pan. Drizzle with Olive Oil and sprinkle with Smoked Paprika, Garlic Powder, Dried Oregano, salt, and pepper
- Toss everything together until thoroughly coated in oil and spices, spreading the mixture out into a single layer
- Roast in the oven for 20-25 minutes, tossing halfway through the cooking time
- Garnish with fresh chopped parsley or a squeeze of lemon juice before serving
Notes
Using a high-quality, hardwood-smoked turkey kielbasa adds depth of flavor to the dish.
Ensure vegetables are cut to similar sizes for even cooking.
