Description

1 lb Grass-Fed Sirloin or Chicken Breast, cut into 1.5-inch cubes
1 cup Bell Peppers (red, yellow, and green), cut into pieces
1 medium Red Onion, cut into pieces
1 medium Zucchini, sliced into thick rounds
2 tbsp Extra Virgin Olive Oil
2 tbsp Fresh Lemon Juice
3 Garlic Cloves, minced
1 tsp Dried Oregano
1 tsp Smoked Paprika
1 tsp Sea Salt
1 tsp Black Pepper


Instructions

  1. Prepare the Marinade: Whisk the olive oil, lemon juice, minced garlic, oregano, smoked paprika, salt, and pepper in a large glass bowl until blended
  2. Marinate the Protein: Add the meat cubes to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes, ideally up to 2 hours
  3. Prep the Vegetables: Wash and chop the peppers, onions, and zucchini into similar-sized pieces as the meat cubes
  4. Assemble the Skewers: Thread the meat and vegetables onto the skewers in an alternating pattern, leaving space between each item
  5. Preheat the Grill: Set the grill to medium-high heat and oil the grates to prevent sticking
  6. Grill to Perfection: Place the skewers on the grill and cook for about 10 to 12 minutes, turning occasionally until cooked through
  7. Rest the Meat: Remove the skewers from the grill and let them rest for five minutes before serving

Notes

Soak wooden skewers in water for at least 30 minutes before grilling to prevent burning.
